Our Sustainable Processes
We are committed to quality, freshness, flavor and sustainability and have created processes to ensure our wholesale and retail customers receive the best quality seafood available. How do we do it?
1. WE PARTNER WITH RESPONSIBLE SUPPLIERS
We partner with and support local fishermen and fisheries that are committed to delivering premium quality, fresh seafood and helping maintain healthy species populations and habitats. We know our fisherman and have built a trusted relationship that spans decades.
2. WE PURCHASE SEAFOOD THAT IS RESPONSIBLY HARVESTED
We support environmentally conscious and responsible fishing and fish farming. We emphasize wild-caught fish that is caught by hook-and-line. This is a more environmentally friendly and a more targeted method of fishing which results in less by-catch and a much higher quality product. While much of what we sell is wild-caught fish, we also sell sustainably harvested farmed fish and work with trusted aqua farmers who are committed to responsible fish farming practices and maintaining the highest industry standards.
We're committed to supporting sustainable practices to help protect the health of our oceans today and for future generations. Whether our seafood is wild-caught or farmed, our fish adheres to our high quality standards and we take care throughout the process to ensure our customers get the freshest, finest fish we can find.
3. WE BELLY ICE, STORE & TRANSPORT FISH IN PLASTIC TOTES
We buy whole fish directly from the supplier and then have it carefully packed in wet ice (including belly ice) and placed in re-usable plastic totes for transport and storage. This is better for the fish and cuts down on packaging materials and waste going to the landfill. By storing and transporting our seafood in reusable plastic totes, we can maintain our high quality standards while cutting costs and protecting the environment.
4. WE FLY IN SEAFOOD DAILY
The vast majority of our seafood is flow by air cargo daily from Alaska, California, Hawaii, Boston and as far away as New Zealand. Unlike many other fish wholesalers, we avoid using barges, ships or trucks to transport our fish. By relying on air cargo we cut down on transit time, which means your fish is always as fresh as can be.
5. WE BUILD LONG RELATIONSHIPS WITH OUR PARTNERS AND GO DIRECTLY TO LOCAL FISHERMAN
The waters of Oregon and Washington offer a bounty of delicious seafood throughout the year. To ensure our wholesale and retail customers receive seafood at the peak of freshness, we will also travel to the coast to buy fresh seafood hand-selected by local fishermen who we've worked with for years and who understand our high quality standards. We then return to Portland and Eugene the same day to deliver the best Northwest seafood you can find.
6. WE CHECK FISH FOR QUALITY CONTROL CONTINUALLY
Every piece of fish that comes to our markets is hand inspected upon arrival. It is then re-packed with fresh wet ice both in the belly and in the surrounding plastic tote to maintain our high quality control standards. And although most fish is in our facility only a short time, we continue to re-check it and re-ice it to maintain its freshness and quality. This strict attention to quality control means our customers always get premium quality seafood.
7. WE CUT-TO-ORDER FISH EVERY MORNING
Every piece of fish is cut-to-order. By cutting the fish to order each morning, we ensure maximum freshness, minimize waste and give our customers exactly the cut of fish they need for their menu.
8. WE SMOKE FISH AT OUR PORTLAND LOCATION
At Newman's we custom smoke premium quality fish ranging from hook-and-line caught Oregon albacore to wild-caught Chinook salmon and troll-caught king salmon using our special Newman’s recipe. Each fish is smoked to perfection with all natural ingredients and no additives or preservatives.
Depending on the season and availability at Newman's you can find smoked fish such as Coho Salmon, Chinook Salmon, Chinook Salmon-Peppered, Eel (Unagi), Escolar, Black Cod, Organic Chinook Salmon, Albacore Tuna, Sockeye Lox and Norwegian Lox-Atlantic.
