Also, high quality, fileted-by-hand, hook and line Rockfish, Ling Cod, and Black Cod are plentiful. The texture and appearance of trolling, hook and line caught fish is superior to trawl (net) caught. The quality is firmer and the flavor tends to be slightly sweeter and milder.
We have added Rockfish to the Fish & Chips menu at both Willamette and The Grotto locations. Our Rockfish are fresh and locally sourced, mostly from the waters off Astoria. Rockfish are medium-firm, lean, mild, nutty and somewhat sweet-flavored. Nutritionally, Rockfish are low in saturated fat, a bit high in cholesterol, a good source of protein, niacin, B-12, and potassium. Rockfish are often used in Asian and American cuisines.
